Salsa Acapulceno

Makes 2-3 cups


4 roma or plum tomatoes, chopped small
¼ cup capers
½ cup green olives, pitted and chopped
1 small white onion, chopped small
2 teaspoons lemon zest
4 tablespoons lemon juice
1 teaspoon salt
1 tablespoon fresh oregano leaves, chopped
1 tablespoon fresh parsley leaves, chopped
3 tablespoons fresh cilantro leaves, chopped fine


Gently mix together all ingredients and let stand at least 10 minutes before serving.
