Chicken, Peppers and Pesto Sauce

Serves 6


6 chicken thighs, boneless skinless
1 red pepper, sliced thin
1 yellow pepper, sliced thin
1 orange pepper, sliced thin
1 red onion, halved and sliced thin
1/2 cup freshly made pesto (recipe follows)


Pre-heat oven to 350°F. Season the chicken with salt and pepper. Place the chicken on a large baking sheet, place the pepper and onion sliced all over the baking sheet as well. Place in the oven and bake for about 25-30 minutes or until the chicken is tender. In the meantime make the pesto and when the chicken comes out of the oven toss the mixture with the pesto and serve immediately.

Pesto Sauce (Light)

Makes 1 cup


1 cup basil leaves
2 cloves garlic
1 teaspoon salt
1 teaspoon lemon zest
1/4 cup olive oil
1/4 cup water


Mix the ingredients up in a blender until smooth.
