Citrus Shrimp Ceviche with Avocadoes & Lemon Thyme Pesto Drizzle

Serves 4

This dish has great balance utilizing all types of citrus: limes, lemons and tangerines, and has slightly sweet herbaceous tones that blend well with the buttery-ness of the avocado. A lovely dish that is simple to prepare and exciting for your guests.

Ingredients

Ger-Nis Citrus Finishing Salts
1 pound medium sized shrimp, peeled and deveined, tails removed
¼ cup citrus champagne vinegar (substitute regular champagne vinegar)
¼ cup citrus juice (a mixture of tangerine, meyer lemon or regular lemon and orange)
3 tablespoons lime juice
1 teaspoon lime zest
1 teaspoon orange zest
¼ cup sugar
1 teaspoon salt
½ teaspoon cracked black pepper
1½ teaspoons fresh parsley, chopped fine
1½ teaspoons fresh cilantro, chopped fine
1 teaspoon fresh chives, chopped superfine
1 teaspoon fresh mint, chopped fine
½ red onion, sliced super thin
A few greens, butter leaf lettuce, mesclun mix or micro greens
2 avocadoes, ripe but firm, peeled, pitted, halved and sliced
Lemon Thyme Pesto Drizzle (recipe follows)

Directions

Bring a medium sauce pan with water to a boil. Add about a tablespoon of the citrus salts to the water. Reduce the temperatre to a low rolling bowling. Add the shrimp and cook for 1½ minutes. In the meantime prepare an ice bath (a big bowl of ice water). Strain the shrimp and place them quickly in the ice bath, making sure to stop the cooking process. When the shrimp are fully cooled and cold, strain and set aside. Whisk together the vinegar, citrus and lime juice, zest, sugar and salt until well mixed. Add the pepper, herbs, red onion and mix well. Season mixture to taste. Gently mix in the shrimp and allow to marinate for about 20 minutes (the shrimp marinade is best served at room temperature or cool, not cold, so ideally refrigerate for about ten minutes and then take out for the last ten). To serve, arrange some greens of choice on a small plate and arrange some avocado slices over the plate. Using a slotted spoon, spoon the marinated shrimp over the avocado and greens. Drizzle some lemon thyme pesto over the salad and garnish with citrus herb finishing salt.

Lemon Thyme Pesto Drizzle

Makes 1 cup pesto

Ingredients

¼ cup fresh lemon thyme leaves (substitute basil if you cannot find lemon thyme)
¼ cup fresh parsley leaves
½ cup extra virgin olive oil
2 tablespoons lemon juice
1 teaspoon Ger-Nis Finishing Salt

Directions

Place all ingredients in a blender and blend until smooth.

Summer Squash and Portobello Taco

Serves 6

Ingredients

1 tablespoon canola oil
1 tablespoon avocado oil
1 white onion, chopped fine
2 zucchinis, chopped fine
1 portabella mushroom, chopped fine
1 red bell pepper, chopped fine
1 jalapeño, chopped fine
Juice and zest of 1 lime
1 tablespoon cumin
Salt
Tortillas, soft or hard, for serving
Monterey Jack cheese (optional)
Avocado (optional)

Directions

In a large sauté pan, over medium heat, add canola oil and avocado oil. Sauté onion until translucent, 5 minutes. Add zucchini, peppers and jalapeño and cook, about 3-4 minutes more. Add the portabellas and cook another few minutes (3-4). Add lime juice, zest, cumin and season with salt. Serve with tortillas. Garnish with cheese and avocado.

Ger-Nis Cobb Salad With Creamy Herbal Ranch Dressing

Serves 6

Ingredients

6 slices turkey bacon, cooked crispy and crumbled
1 cups turkey breast, cooked and cubed small
4 hard boiled eggs, chopped small
1 cup blue cheese crumbles
1 avocados, ripe but firm, cubed small
1 red peppers, chopped small
1 medium red onion, chopped small
1 cups cherry tomatoes, quartered
2 cups ice berg lettuce, chopped small
2 cups romaine lettuce, chopped small
Salt & pepper
¼ cup fresh chives, chopped superfine
Creamy Herbal Ranch Dressing (recipe follows)

Directions

The key to the perfect cobb is the uniform small chop. Your cuts must be constant to optimize flavors. Once all the items are chopped or crumbled etc to a consistent shape and size, combine the lettuces in a large bowl and mix well. Season with salt & pepper. Lay them in a shallow oblong serving dish, making sure it’s flat and even, perhaps with a slight mound at the center. Arrange the items one by one in a neat line across the dish, like stripes on a flag. Garnish with chopped chives. When ready to serve let each person grab their goods and drizzle the dressing on each salad.

Creamy Herbal Ranch Dressing
Makes approximately 1 cup

Ingredients

½ cup mayonnaise
½ cup buttermilk
2 tablespoons lemon juice
2 teaspoons mustard (Dijon or regular)
1 teaspoon garlic salt
2 tablespoons grated red onion
1 tablespoon shallot, chopped fine
½ red onion, shredded
2 tablespoons fresh parsley, chopped
2 tablespoons fresh dill, chopped
2 tablespoons fresh chives, chopped
1 teaspoon salt
1 teaspoon black pepper

Directions

In a medium mixing bowl whisk together mayonnaise, buttermilk, lemon juice, garlic salt and mustard. Mix well. Add onions and shallots and fresh herbs and whisk together well until smooth and creamy. Add salt and lemon juice to taste.

Citrus Chili Atlantic Mackerel Ceviche

Serves 6

Ingredients

2 pounds Atlantic Mackerel fillets, chopped in large flat pieces
2 teaspoons salt
Juice of 2 lemons
Juice of 1 lime
2 tablespoons champagne vinegar
1 tablespoon olive oil
1 teaspoon lemon zest
1 teaspoon lime zest
2 teaspoons fresh red chili, de-seeded and chopped super fine
1 teaspoon fresh green chili, de-seeded and chopped superfine
1 tablespoon fresh parsley, chopped fine
1 tablespoon fresh mint, chopped fine
2 avocados sliced
1 cup segmented citrus pieces, lemons, oranges and grapefruits (your choice)

Directions

Place the chopped fish in a large bowl and salt it and let sit for a few minutes. In separate bowl whisk together the lemon juice, oil, zest, chilis and herbs until well combined. Pour over the fish and mix well. Let stand in the refrigerator for about 20 minutes before serving. For serving place fish down and garnish with avocado and citrus segments and drizzle ceviche juice over the top.

Classic Guacamole

Serves 2-3 people

Ingredients

2 tablespoons white onions, finely chopped
1 tablespoon fresh Serrano chili, minced
½ teaspoon kosher salt
¼ cup chopped cilantro, divided
1 large avocado
A squeeze of lime

Directions

Mash the onion, chili, salt, and half the cilantro to a paste consistency. Score the flesh of the avocado halves in a crosshatch pattern with a knife then scoop into a bowl. Combine ingredients and mix well. Add the rest of cilantro season with lime and salt.

Huevos Ranchero’s de Nissa

Serves 4-6

Ingredients

Avocado or canola oil
1 medium red onion, chopped
½ jalapeño, deseeded and chopped
½ red pepper, chopped small
½ cup cherry tomatoes, halved
6 eggs
Salt
Ger-Nis Tabasco
½ cup fresh cilantro leaves, chopped fine
Avocado (optional)
¼ cup cotija cheese
Corn tortillas, warmed

Directions

In a medium sauté pan, heat oil on medium heat and sauté onions for a few minutes. Add peppers and sauté another few minutes (3 minutes). Add the cherry tomatoes next and sauté for a few seconds. Crack the eggs into the pan one by one and mix gently and cook until eggs are just done, a few minutes. Make sure not to overcook the eggs. Season with salt and serve with Tabasco and avocado, cheese and tortillas.

Rock Shrimp Tacos

Serves 4

INGREDIENTS

1 pound rock shrimp
Juice of 1 lime
12 teaspoons cumin
½ cup fresh cilantro
Salt
Oil
Cherry tomatoes
Corn or whole wheat tortillas
Avocado
Radish Salad Garnish

DIRECTIONS

In a small mixing bowl, place shrimp, lime juice, salt and cumin, and mix. Let stand for 5-10 minutes. Strain, reserving liquid. In the meantime, make the radish salad. In a medium skillet, heat a small amount of oil, and sauté shrimp until cooked through, or about 3 minutes. Add liquid, and reduce. To warm tortillas, heat directly over gas stove flipping each few seconds or heat on a flat cast iron pan. Serve tacos with cherry tomatoes and avocadoes, and season with maldon salt. Garnish with radish salad.

Picado de Rabano (Radish Salad)

Serves 4-6

INGREDIENTS

1 bunch (about 12) radishes, sliced thin
¼ cup fresh cilantro leaves, chopped fine
Juice of 2 limes
Salt

DIRECTIONS

In a small mixing bowl, combine radishes, cilantro and lime juice; mix well, and season with a generous amount of salt (preferably a flake salt like maldon). Allow to sit about 5 minutes before serving.

Mexican Herbed Chicken Albondigas Soup

Serves 6

INGREDIENTS

For the Meatballs

1 pound ground chicken
Zest and juice of 2 limes
½ cup fresh cilantro, chopped fine
1 teaspoon jalapeño pepper, chopped fine
¼ cup red bell pepper, chopped fine
1 tablespoon dried cumin
1 teaspoon salt
1 egg, beaten

For the Soup

Olive oil
2 cloves garlic, chopped fine
1 medium red onion, chopped
1 medium red bell pepper, chopped
1 medium carrot, peeled and chopped
1 medium zucchini, sliced round
1 teaspoon jalapeño pepper, seeded and chopped fine
1 tablespoon ground cumin
2 teaspoons salt
1 teaspoon cracked pepper
1 teaspoon chili powder
4 cups chicken broth
4 small fresh corn totillas, sliced in thin strips
Avocado, for garnish
Cotija cheese, for garnish

PREPARATION

To assemble meatballs, use hands to mix together all ingredients until well blended. Form into balls from 1 to 2-inches in diameter. Set aside.

Heat olive oil in a large soup pan over medium-high heat. Sauté garlic, onions, red pepper, and carrots for about 5 minutes, stirring constantly. Add zucchini, jalapeños, and spices. Mix well, sautéing for another few minutes. Pour in the chicken brtoh, and stir until well combined. Gently lower the meatballs into the pan. Bring to a boil, and reduce heat to a low simmer. Cook for another 20 to 30 minutes over low heat, until meatballs are cooked through. Take off heat, and add tortilla strips. Let stand for about 5 minutes before serving. Garnish with avocado and cotija cheese.

Corn Salsa with Chips

Avocado Ice Cream

INGREDIENTS

2 avocados, meat scooped out
Juice of 1 lime
1½ cup whole milk
½ cup sugar
1 cup heavy cream

PREPARATION

Puree avocados, lime juice, whole milk and sugar in a blender until very smooth in texture. Transfer to a medium mixing bowl and whisk in heavy cream until combined. Chill the mixture for a few hours in the refrigerator and then follow the instructions for your ice cream  maker.

Fresh Guacamole

Makes approximately 3 cups

INGREDIENTS

6-8 avocados, ripe and soft but not mushy
½ cup cilantro leaves
½ cup tomatoes, chopped fine
½ cup white onions, chopped fine
1 jalapeño
1 teaspoon cumin powder
Salt
5-6 limes

PREPARATION

In a large mixing bowl mash avocados one by one with a large fork until chunky and relatively smooth. Add cilantro, tomatoes, white onions, jalapeño and cumin. Continue to mash and mix all ingredients. Add a few pinches of salt and mix well. Begin to juice the limes into the guacamole one by one mixing and mashing after each one. Taste, and add salt pinch by pinch until desired flavor. You should use approximately 3 teaspoons in total.

Southwest Turkey Burger with Cilantro Avocado

INGREDIENTS

1 lb chicken breasts cut into cubes
zest of 1 lime
juice of 2 limes
¼ cup red onion chopped fine
¼ cup red peppers chopped fine
¼ cup cilantro chopped fine
1 jalapeño chopped fine
1 T cumin powder

PREPARATION

Grind all ingredients in the food processor using the pulse button until the meat is coarsely ground. Form patties, place on wax paper and freeze for about six minutes on each side or until par frozen. Grill on high heat on a very clean grill, flipping only once per side. Cook for about four minutes per side for a well done burger and three minutes per side for medium burgers. Serve with butter leaf lettuce for a delicious fresh BBQ burger! Serve with pepper jack cheese and avocado slices.

Corn & Avocado Cilantro Salsa

INGREDIENTS

3 cobs grilled corn off of the cob
¼ cup red onion chopped
¼ cup red pepper chopped
½ cup cilantro chopped
juice of 2 limes
2 avocadoes chopped
½ cup plain yogurt
salt/pepper

PREPARATION

Mix all ingredients and chill. Serve over grilled meats , fish and/or poultry. Also perfect over grilled vegetables or grilled tortillas.

Spicy Avocado Dressing

1 medium avocado, pitted and peeled
Juice of 2 medium limes
1 T jalapenos, chopped and deseeded
½ c yogurt
1 teaspoon cumin
1 teaspoon salt

PREPARATION

Mix all ingredients in a blender and blend until smooth.

Serve on a chicken Caesar with red peppers , serve over fajitas or over fish tacos!
