Makes 1 cup salt
Ingredients
¾ cup maldon salt
1 tablespoon lemon zest*
1 tablespoon lime zest*
1 teaspoon orange zest*
2 tablespoons fresh Cilantro leaves, chopped superfine
3 tablespoons fresh parlsey leaves, chopped superfine
1 jalepeno, desseded, chopped superfine
*Use organic unwaxed citrus, make sure citrus and herbs are completely dry.
Directions
Preheat oven to 225°F. Combine all the ingredients in a large bowl and mix thoroughly. Place the mixture on a lined baking sheet allowing amble room, making sure to flatten completely the mixture against the pan. Place in the oven and bake for about 30 minutes, the zest and herbs should crumble easily when pressed together with your fingers. Allow to cool and then either process with your fingers by rubbing zest and herbs together with salt or pulse a few times in a spice grinder. Store in an airtight jar for up to two months. Do not refrigerate.

Makes 1 cocktail
2 ounces (really good quality) Anejo Tequila
½ ounce Domaine de Canton Ginger Liquor
1 ounce Ginger, Mango & Chili Syrup*
Juice of 1 Lime
Sake (ice cold and preferable a floral dry type)
Chili Pepper Cilantro – Lime Garnish*
In a shaker filled with ice, combine the tequila, ginger liquor, syrup and the lime juice and shake vigorously. Strain into a coupe or martini style glass and top with a float of Sake. Garnish with a lime wheel float and a chili pepper slice.
* Ginger, Mango & Chili Syrup – In a saucepan combine the pulp of two mangoes, 1 cup of water and 1 tablespoon chopped (superfine) ginger. Bring to a boil, then reduce heat and simmer for about 10 minutes. Add ½ cup coconut nectar and stir super well. (Add more or less coconut nectar according to sweet preference) Take of the heat and cool. Strain and chill liquid. (Makes about 1 ½ cups of syrup)
*Chile Pepper Lime Garnish-in a tiny bowl combine the juice of half a lime, 1 tablespoon coconut nectar and ½ tablespoon cilantro, chopped super fine and mix well. Place 3-4 thin lime wheels and 1 Serrano chili pepper sliced thin in the mixture, coating well and let stand  (chill) for about an hour before using.

Makes 1 cup

A lovely take on Chimichurri, with fried lemon peels and bay leave to intoxicate with Mediterranean flavors. Excellent on steak and fish.
Ingredients
2-3 tablespoons olive oil 3 cloves garlic, chopped fine 1 medium shallot, chopped fine 1 fresh red chili pepper, chopped ( deseeded and de-pithed for less heat) 3-4 fresh bay leaves 1-2 tablespoons lemon zest ( peeled and sliced to make thin strips) ¾ cup mixed olives, seeded and chopped coarsely 1 tablespoon fresh oregano leaves ½ teaspoon salt 1 teaspoon black pepper, cracked 2-3 tablespoons red wine vinegar
Directions
Heat the olive oil in a large cast iron pan on medium heat. Add the garlic, shallots, chilies, bay leaves and lemon zest and sauté until the garlic and shallots begin to brown. Turn up the heat and cook on high for a few minutes, stirring until the lemon peels start to get crisp. Turn off the heat and add the olives and oregano. Season with salt and pepper and add the red wine vinegar. Let stand about 2o minutes before serving at ambient temperature.

Makes 1 pound of marinated mini mozzarella balls
Ingredients
3/4 cup extra virgin olive oil
2 teaspoons lemon zest
1 teaspoon salt
1 teaspoon cracked black pepper
1/2-1 teaspoon red chili flakes
1 pound fresh mini mozzarella balls
1 tablespoon fresh basil leaves, chopped fine
1 tablespoon fresh thyme leaves
1 tablespoon fresh parsley leaves, chopped fine
1 tablespoon fresh marjoram leaves, chopped fine
Directions
In a large bowl whisk together the oil zest and spices. Add in the mozzarella balls and herbs and mix well. Allow to marinate for up to an hour, minimum of 30 minutes.

Wooden skewers, presoaked
1 tablespoon fresh ginger, grated
3 cloves of garlic, grated
2 tablespoons fresh thai basil, chopped fine
Zest of 1 lime
Juice of 3 limes
2 tablespoons soy sauce
Mild Peanut Sauce (recipe follows)
Directions
Mix the ginger, garlic, thai basil, lime juice and zest, and soy sauce together in a bowl until well combined. Place the tofu in the marinade and marinade for about 20 minutes. Thread the tofu on the skewer into a row of cubes. Grill until crispy on the outside and tender on the inside or about 2 minutes per side. Brushing with the marinade as desired. Serve with Mild Peanut Sauce.
Mild Peanut Sauce
Makes 1½ cups
Ingredients
¾ cups creamy peanut butter
1 teaspoon fresh ginger, chopped superfine
1 teaspoon lemon grass bulb, chopped superfine
Zest of 1 lime
Juice of 2 limes
¼ cup tamari
2 tablespoons brown sugar
¼ cup very hot water
Directions
Whisk together all ingredients until smooth and creamy adjust spiciness by adding more sambal. Adjust saltiness by adding more tamari.

1½ pounds medium to large sized shrimp

Mix the ginger, garlic, lime juice and zest, salt and sambal together in a bowl until well combined. Place the shrimp in the marinade and marinade overnight or for at least an hour. Thread the shrimp on the skewer into a row of shrimps. Grill until crispy on the outside and tender on the inside or about 2 minutes per side. Brushing with the marinade as desired. Serve with Chili Honey Sauce.
Chili Honey Sauce
Makes ¾ cup
Ingredients
½ cup honey, warmed
¼ cup spicy sambal
Directions
Mix together all ingredients thoroughly. Let stand for about 20 minutes before serving, servee warm over satay.

2 pounds Atlantic Mackerel fillets, chopped in large flat pieces
2 teaspoons salt
Juice of 2 lemons
Juice of 2 lime
2 tablespoons champagne vinegar

1 teaspoon lemon zest
1 teaspoon lime zest
2 teaspoons fresh red chili, de-seeded and chopped superfine
1 teaspoon fresh green chili, de-seeded and chopped superfine
1 tablespoon fresh parsley, chopped fine

2 avocados sliced
1 cup segmented citrus pieces, lemons, oranges and grapefruits (your choice)
Directions
Place the chopped fish in a large bowl and salt it and let sit for a few minutes. In separate bowl whisk together the lemon juice, oil, zest, chilis and herbs until well combined. Pour over the fish and mix well. Let stand in the refrigerator for about 20 minutes before serving. For serving place fish down and granish with avocado and citrus segments and drizzle ceviche juice over the top.

Ingredients
2 zucchinis, cut into ribbons (using a mandolin)
½ cup fresh mint leaves, chopped
2 tablespoons olive oil
1 teaspoon lemon zest
1 teaspoon lemon juice
1 clove garlic, chopped superfine
1 teaspoon fresh red chili, deseeded and chopped superfine
2 tablespoons pine nuts, toasted
Salt
12-18 slices parmesan cheese
Ciabatta bread slices
Directions
In a mixing bowl mix together the zucchini, garlic, lemon juice and mint. Drizzle olive oil and lemon juice over it and sprinkle with chilies, pine nuts and salt and mix well. Let the zucchini sit for about 10 minutes. After the zucchini has marinated place some parmesan on each side of the bread slices, layer the zucchini ribbons on the cheese and drizzle a little dressing on. Fold the bread over and cook in a panini press making sure that the outside of the bread is greased or oiled for optimal crispness.

Makes about 30 truffles
Ingredients
½ cup heavy cream
1 teaspoon vanilla extract
½ teaspoon curry powder
½ teaspoon fresh chili, chopped superfine
1 tablespoon honey
½ cup stone fresh mango puree or chopped ripe mango
8 ounces semisweet or bittersweet dark chocolate, chopped
Sweet curry Powder for dusting (*3 teaspoon curry powder mixed with ¼ cup powdered sugar)
Directions
In a heavy bottom saucepan, heat the heavy cream, vanilla, curry powder, fresh chili, honey and mango, to a simmer, about 3 minutes, using a rubber spatula to scrape the side of the pan where the cream builds up. In a separate metal bowl, place the chocolate. When cream is warm, pour it over the chocolate, let sit for about 1 minute, and then stir until smooth and chocolate is melted and incorporated evenly. Place the metal bowl in the refrigerator for about 2 hours. Spoon small amount into hands, and roll into a little ball. Do not handle the chocolate ganache too much as the heat from your hands will melt the chocolate. Place the balls on a baking sheet lined with parchment paper and sprinkle Sweet curry powder. Place in the refrigerator overnight.

1 ½ -2 pounds whole fish (sea bass, snapper)
1 clove garlic, mashed
1 chili, chopped fine
1 tablespoon olive oil
1 teaspoon coarse salt
¾ cup whole-wheat flour
¼ cup cornstarch

Directions
In the body of the fish cut shallow criss-cross line (patterns) across the fish on both sides of the body. Mix the garlic, chili, olive oil and coarse salt together and rub all over fish. Mix together the whole-wheat flour and corn starch and salt. Dredge the fish into the flour mixture well, making sure all parts including cut parts are well coated. Heat about ½ inch of oil in a sauté pan on high heat. Add the fish and fry for about 4-5 minutes per side or until golden brown. Drain on paper towels and serve immediately with lime wedge garnishes.

Ingredients

2 small spring onions, chopped fine
½ cup fennel bulb, chopped fine

½ cup carrots, chopped fine

¼ cup olive oil

Directions
Pre-heat oven to 425° F. Place the garlic, onions, fennel, red pepper, asparagus, peas and carrots on a line baking sheet and roast for about 10 -15 minutes or until all vegetables are beginning to brown and char. In the mean time whisk together the fresh herbs, lemon zest lemon juice, chili flakes and olive oil. When roasted vegetables come out of the oven immediately place in a bowl and drizzle with dressing. Mix well and season with salt. Serve with whole wheat chips.
Lemony Whole Wheat Chips
Serves 4
Ingredients
10-12 whole wheat tortillas, cut into 3 inch triangles
1 tablespoon fresh parsley, chopped
1 tablespoon canola oil
Juice of 1 lemon

Makes approximately 2 cups
Ingredients
1 to 2 cloves garlic
¼- ½ cup preserved lemons
1 cup fresh parsley leaves
1 cup fresh mint leaves
1 long red chili, deseeded and chopped

½ cup extra virgin olive oil

Cucumber Pomegranate Salsa
Makes approximately 2 cups

1 English cucumber, peeled and chopped fine

1 teaspoon lemon zest
2 teaspoons lemon juice
¼ cup extra virgin olive oil

In a medium bowl mix together cucumber, pomegranate seeds, red onion, mint and lemon zest, until well combined. Drizzle lemon juice, oil and vinegar over the top and mix again until dressing is incorporated. Season to taste with salt and pepper.

20 pieces of medium-size shrimp, peeled and cleaned

In a small sauté pan, over medium heat add olive oil. Cook garlic cloves, chili peppers, and cayenne pepper. Add shrimp and cook for about 6 minutes, 3 minutes on either side, or until they begin to turn pink and curl slightly. Serve immediately in a bowl with bread.

Chimichurri originally hails from Argentina and Uruguay. It is a green herb sauce generally used to flavor meats that incorporates vinegar, garlic, and other spices. There are many variations of Chimichurri throughout the world, from Central America to France and Italy. This version adds a bit more depth and brightness with the preserved lemons. An excellent accompaniment to grilled lamb, fish and even pastas and grilled vegetables.
Ingredients
1 to 2 garlic cloves
¼- ½ cup preserved lemons
1 cup fresh flat-leaf parsley leaves
1 cup fresh mint leaves
1 long red chili, deseeded and chopped

Serves 6
INGREDIENTS
3 tablespoons mirin
2 tablespoons soy sauce
A 1-inch piece of fresh ginger, peeled and chopped fine
1 pound shrimp, peeled and deveined
3 tablespoons canola or peanut oil
1 purple eggplant, cubed
1 red bell pepper, chopped
½ cup water
1 small chili, chopped fine
2 cloves garlic, chopped fine
2 tablespoons fish sauce
1½ tablespoons black soy sauce
1 teaspoon sugar
1½ tablespoons water
¼ cup basil leaves, torn
DIRECTIONS
In a small bowl, combine mirin, soy sauce, and ginger. Add shrimp, and marinate 15 to 20 minutes.
In a large deep skillet or wok over high heat, add 1½ tablespoons oil. Add shrimp, and cook for 3 minutes or until shrimp has changed to light pink color. Remove shrimp, and set aside on plate. Clean out pan.
In the same pan, add remaining oil. Add eggplant and red peppers, and cook, 5 minutes. Add ½ cup water, and cover pan to steam vegetables slightly. Remove lid, and add chili and garlic. Stir until fragrant, 1 minute. Add fish sauce, black soy sauce, sugar and water and bring to a boil. Add cooked shrimp and basil and mix. Serve immediately.

INGREDIENTS
1½ tablespoons canola or peanut oil
1 bunch scallions, sliced thin (reserve ¼ cup to garnish)
A 1-inch piece of fresh ginger, peeled and chopped fine
3 cloves garlic, chopped fine
1 small chili, sliced thin
1 red bell pepper, sliced
1 cup snow peas
1 cup snap peas
2 tablespoons mirin
3½ tablespoons tamari
3 tablespoons hoisin sauce
1 tablespoon honey
1 teaspoon sesame oil
2 teaspoons rice wine vinegar
DIRECTIONS
In a large deep skillet or wok over high heat, add oil. Add scallions, ginger, garlic and chili, and cook until fragrant, about 30 seconds. Add bell peppers, cook 2 minutes. Add snow peas, snap peas and mirin rice wine and continue cooking until vegetables are tender, about 3 minutes.
Add tamari, hoisin sauce, honey, sesame oil and rice wine vinegar and cook 1 minute. Take off heat and add ¼ cup reserved thinly sliced scallions. Serve warm.

INGREDIENTS
½ cup chicken broth
2 tablespoons soy sauce
2 tablespoons mirin
1 teaspoon sugar
½ teaspoon toasted sesame oil
2 teaspoons black soy sauce
1 teaspoon cornstarch
1½ pounds green beans, trimmed
2 tablespoons canola or peanut oil
2 scallions, chopped
2 cloves garlic, chopped fine
1 small chili, sliced thin
DIRECTIONS
Prepare a large bowl with ice and water and set aside. In a small bowl, combine first 7 ingredients to make a sauce, and set aside.
In a large pot, bring 5 cups of water to a boil. Add a handful of salt. Next, add the green beans, and bring back to a boil. Cook, uncovered 5 to 6 minutes or until almost cooked but still crisp.
Drain and shock in bowl of ice and water.
In a large deep skillet or work over high heat, add oil. Add scallions, garlic, and chill; and cook briefly. Add already combined sauce, and bring to a boil, stirring constantly to prevent lumps, until thickened. Return the cooked beans to the pan, and toss lightly to coat with sauce. Serve.

Makes 20 medium latkes
Cool, healthy, and refreshing, these carrot latkes are incredibly fresh and zesty!
INGREDIENTS
For Latkes
10 large carrots, peeled and shredded
1 cup all-purpose flour
1 teaspoon baking powder
3 eggs, beaten
3 tablespoons fresh cilantro, chopped
½ cup green onions, sliced thin
1 tablespoon fresh ginger, peeled and grated
2 tablespoons salt
2 tablespoons black pepper
Vegetable oil
For the Lemongrass Chili Mint Yogurt
1 cup plain yogurt
1 teaspoon lemongrass, chopped superfine
1 tablespoon fresh mint, chopped fine
1 tablespoon fresh cilantro, chopped fine
1 small Thai chili, seeded and chopped superfine
Zest and juice of 1 lime
Salt and pepper
PREPARATION
In a large mixing bowl, combine carrots, flour, baking powder, cilantro, green onions, ginger, salt, and pepper, and mix well. Heat a large heavy bottom skillet over high heat, making sure there is enough oil to cover the bottom generously. Form 2 to 3-inch pancakes, drop into pan, and brown on both sides until deep golden brown, about 2 to 3 minutes on each side. Take off heat, and place on paper towels so excess oil can be drained.
Combine all ingredients for lemongrass chili mint yogurt in a small mixing bowl, and combine until smooth and thoroughly mixed. Serve cold on top of hot latkes.

INGREDIENTS
For the Rub
2 tablespoons cumin
2 tablespoons green chili powder
2 tablespoons salt
3 pounds pork butt, cubed in 1-inch pieces
For the Chili
Vegetable oil
2 medium yellow onions, chopped
1 jalapeño, seeded, pith removed, and chopped
1 pound tomatillos, husks removed and chopped
3 poblano chilies, roasted, peeled, seeded, and chopped
1 tablespoon cumin
2 tablespoons cumin seeds, toasted
Zest and juice of 2 limes
1 cup pinto beans, cooked
1 cup white kidney beans, cooked
1 cup black beans, cooked
1 cup water
Salt
1 cup fresh cilantro leaves, chopped
Cheddar or Cotija cheese, to garnish
PREPARATION
In a small bowl, mix spices for the rub, and rub all over the meat. Let sit for about 10 minutes while meat soaks up flavor. In a heavy bottom soup pan, add oil, and place over medium-high heat. Add the onions and jalapeño, and sauté for a few minutes. Add the seasoned meat, and sauté until meat is browned on all sides. Next, add the tomatillos, poblanos, cumin, cumin seeds, lime zest and juice, beans, and water. Mix well, and bring to a boil. Once boil is reached, turn to low, and let simmer for about 20 minutes and season with salt. Take off heat, add cilantro leaves and let stand for about 20 minutes before serving. Serve with cheese!

Makes 2 cups of gravy
INGREDIENTS
1 pound tomatillos, husks removed, cut into quarters
1 teaspoon cumin
1 teaspoon salt
1 cup chicken broth
3 poblano chili peppers, roasted, seeded and chopped
1 jalapeño pepper, roasted, seeded and chopped
1 cup fresh cilantro leaves
½ cup heavy whipping cream
Juice and zest of 1 lime
PREPARATION
Place the tomatillos, cumin, salt and chicken broth in a medium sauce pan and boil, about 15 to 20 minutes or until tomatillos are soft. Remove from the heat and allow to cool. Transfer tomatillo mixture to a blender and add roasted peppers, cilantro, cream, lime juice and zest and blend until smooth.

Makes 20 medium latkes
Cool, healthy and refreshing, these carrot latkes are incredibly fresh and zesty with flavor!
INGREDIENTS
6 cups carrots, shredded
1 cup all purpose white flour
1 teaspoon baking powder
3 eggs, beaten
3 tablespoons fresh cilantro, chopped
½ cup green onions, sliced thin
1 tablespoon fresh ginger, grated
2 teaspoons salt
2 teaspoons black pepper
Vegetable oil
PREPARATION
In a large mixing bowl, combine all ingredients except oil and mix well. Heat a large heavy bottom skillet to high heat making sure there is enough oil to cover the bottom generously. Form 2-3 inch pancakes, drop into pan and brown on both sides until deep golden brown, usually about 2-3 minutes on each side. Take off heat and place on paper towels so excess oil can be drained.
Lemongrass Chili Mint Yogurt
INGREDIENTS
1 cup plain yogurt
1 teaspoon fresh ginger, minced fine
1 teaspoon lemongrass, minced fine
1 tablespoon fresh mint, chopped fine
1 tablespoon fresh cilantro, chopped fine
1 small Thai chili, seeds removed and minced fine
Juice and zest of 1 lime
Salt/pepper
PREPARATION
Combine all ingredients in a small mixing bowl and mix well until smooth and thoroughly mixed. Serve cold on top of hot latkes.

Ingredients
4 cucumbers chopped
¼ cup red onion chopped
1 T chopped ginger
juice and zest of 1 lime
¼ cup rice vinegar
1 T sugar
½ cup chopped mint
fresh chopped red cayenne chili
Directions
Mix all ingredients in a mixing bowl and refrigerate for 1 hour. Serve cold over an Asian grilled flank steak or chicken. Also excellent on brown rice and grilled mushrooms.

INGREDIENTS
6 soft boiled eggs
¼ cup crème fraiche
1 T lime juice and 1 tsp zest
1 T citrus vinegar
¼ c chopped red pepper
¼ c chopped red onion
¼ cup olive oil
1 tsp chopped jalapeño, set the remainder aside
½ cup cilantro
Salt/pepper
PREPARATION
Blend cilantro, olive oil and remainder of jalapeño in a blender until smooth. Strain.
Cut eggs in half. Set egg whites aside. Mix egg yolks and all other ingredients until blended. Spoon mixtures onto egg whites and drizzle with cilantro sauce.

INGREDIENTS
3 large euro cucumbers sliced thin
2 cups chopped mint
2 cayenne peppers sliced thinly, seeds removed
(Serrano chilis can be substituted)
¼ c. sugar
2 cups water
1 T salt
1 c rice wine vinegar, flavored with ginger if you can find.
PREPARATION
Mix all liquid ingredients in a large mixing bowl, mix until all salt and sugar is dissolved, add mint and chilis, mix well and add cucumbers, refrigerates for at least one hour and strain before serving.
