<p>2 tablespoons vegetable oil<br />
4 garlic cloves, finely chopped<br />
3 red Thai chiles, seeded &amp; &nbsp;finely chopped<br />
1 2-inch piece of ginger, peeled and minced<br />
1 small red onion, finely chopped<br />
2 tablespoons salted roasted peanuts, coarsely chopped<br />
2 small quinces&mdash;peeled, halved, cored and cut into &frac14;-inch dice<br />
2 tablespoons fresh lime juice<br />
1 tablespoon sugar<br />
1 teaspoon salt<br />
1 tablespoon mint leaves, chopped<br />
1 tablespoon cilantro, chopped</p>
<h3>PREPARATION</h3>
<p>In a large skillet, heat the vegetable oil. Add the garlic, chiles, ginger and onion and cook over moderate heat until softened, about 4 minutes. Add the peanuts and cook until sizzling, about 3 minutes. Add the quinces, lime juice, sugar and salt. Cover and simmer, stirring a few times, until the quince is barely tender, about 3 minutes. Let cool slightly. Stir in the mint and cilantro and serve.</p>

  1 small jalapeno pepper, chopped fine and de-seeded<br />
  &frac14; cup fresh cilantro, chopped</p>
<h3>PREPARATION</h3>
<p>Blend all ingredients in a blender until smooth. A handheld mixer will also work. Use on chicken, fish and steaks whenever you want. It is also an excellent and versatile mayo. Grilled chipotle chicken salad sandwiches with this mayo are perfect for a summertime weekend!</p>

  &frac14; cup extra-virgin olive oil or oil of your choice<br />
  1 teaspoon lemon zest <br />
  Juice of one lemon<br />
  Salt/pepper</p>
<h3>PREPARATION</h3>
<p>Mix all ingredients with a handheld mixer or food processor until smooth. Use on potato salads, tomato salads, grilled chicken, grilled fish and even bratwursts.</p>

By altering the flavor just a smidgen here and there, a simple enhanced mayo can completely change the way your food tastes and make it so much more extraordinary.</p>
<p>Makes 2&frac12; cups</p>
<h3>INGREDIENTS</h3>
<p>2 egg yolks<br />
  1 whole egg<br />
  Juice of 1 lemon<br />
  2 tablespoons white wine vinegar<br />
  1 teaspoon mustard<br />
  Pinch of salt<br />
  2 cups extra virgin olive oil</p>
<h3>PREPARATION</h3>
<p>In a food processor, add egg yolks, whole egg, lemon juice, vinegar, mustard and salt. Run the processor on medium speed for about 20 to 30 seconds. While the food processor is still running begin to slowly pour the olive oil through the top; slowly adding all 2 cups (slow-constant pour). After all the oil has been added, run the processor a few more seconds and check for flavor and consistency. Add more salt or lemon juice if needed. Refrigerate with a lid.</p>
