Herstarr Honeydew Popsicles

This recipe was invented by none other than Svea Herstarr Pierson, when on a  hot summer week in Southern California the Pierson’s came together and got a dud honeydew melon.  Svea stepped up for the picky Pierson palette and with the  un-wasteful gene embedded in her, created these healthy, simple and totally delicious, not to mention gorgeous popsicles!  These are also amazing ice cubes for sparkling water and grapefruit soda as Ivin proved!

The beet honey syrup was a last minute idea added by Nissa who was making pickled beets in the kitchen at the same time and used the beet peels to make a pretty syrup for the coloring!

Makes 9-12 popsicles


½ honey dew melon, cold and cubed small
Zest of 1 lime
Juice of 3 limes
Beet Honey Syrup*, chilled


In a blender combine all ingredients and blend until smooth. Pour into popsicle molds or ice cube trays, freeze and enjoy!

*Beet Honey Syrup- combine  raw beet peels from 1-2 beets with ¾ cup water and ¼ cup honey and bring to a boil.  Reduce heat  to simmer for about 5 minutes.  Take off the heat and cool completely. Strain and refrigerate!

Cilantro Lime Honeydew Prosciutto Bites

Makes 20 Bites


Lime marmalade, recipe below
10 each prosciutto slices, sliced thin and cut in half
½ cup cilantro leaves
1 ripe honeydew melon, skin removed, sliced in 2 to 3” long slices


To assemble, spread ½ teaspoon lime marmalade over the prosciutto and place a few cilantro leaves on top, followed by a slice of melon and then wrap the prosciutto around the melon.
Serve immediately.

Lime Marmalade


2 limes
½ cup sugar
½ cup water
1 teaspoon salt


Zest limes and set aside.
Remove and discard the white part (pith) of the lime and segment into supremes or just the lime “meat”.
In a heavy bottom saucepan, bring the lime zest, sugar, water, lime “meat,” and salt to a boil.
Let boil on a low rolling boil for about 20 minutes or until reduced by half.
Take off heat and allow to cool to room temperature (it will thicken as it cools).
