Bourbon BBQ Sauce

Makes 5 Cups

Ingredients

1 ½ cups molasses
2 cups white wine vinegar
1 ½ cups ketchup
½ tablespoon garlic paste (smashed garlic)
½ tablespoon ginger paste (smashed ginger)
2 tablespoons franks hot sauce
½ cup bourbon

Directions

Place all ingredients, except the bourbon, in a large sauce pan and bring to a boil. Reduce the heat to a simmer and cook until a thick and properly desired consistency. In another small pan reduce the bourbon by half and add to the sauce at the end of cooking, stir allow to cool before using.

Lentil Salad with Creamy Yogurt Dressing

Serves 4 to 6

Ingredients

For the salad

6 cups water
113 cups French lentils, sorted
2 teaspoons sea salt
2 medium carrots, peeled and finely diced (to the size of the lentils)
1 stalk celery, finely diced (to the size of the lentils)
½ medium red bell pepper, finely diced (to the size of the lentils)
½ medium yellow bell pepper, finely diced (to the size of the lentils)
2 tablespoons fresh dill, chopped
2 tablespoons fresh chives, snipped
2 tablespoons fresh tarragon, chopped
2 tablespoons fresh parsley, chopped

For the dressing

1 cup yogurt
2 tablespoons freshly squeezed lemon juice
2 teaspoon white wine vinegar
3 tablespoons extra-virgin olive oil
2 teaspoons sea salt, or to taste
½ teaspoon freshly milled black pepper, or to taste

Directions

To prepare the salad, in a medium saucepan, bring the water to a boil. Add the lentils and cook at a boil for 10 minutes. Add the salt and boil for 10 to 15 minutes longer or until the lentils are cooked through but are still firm enough to hold their shape. Drain them in a sieve and rinse under cold running water until cool. Drain thoroughly and pour into a serving bowl.

Add the chopped vegetables and herbs and stir to combine.

In a bowl, combine all of the dressing ingredients and whisk until smooth. Pour the dressing over the salad and mix well. Let the salad to rest for 10 to 15 minutes. Adjust seasonings to taste.

Butter-Braised Radishes With Their Greens

Serves 4

INGREDIENTS

1-2 bunches red radishes with their greens (about 2 pounds)
3 tablespoons unsalted butter
1 to 2 teaspoons brown sugar
Sea salt or kosher salt
1 tablespoon white wine vinegar
Freshly ground black pepper
Freshly grated nutmeg

DIRECTIONS

Cut the radishes away from their leaves, leaving about ½ inch of green attached. Scrub the radishes and slice them in halves or quarters depending on their size. Wash the greens well, chop roughly, and keep separate.

In a wide pan with a tight-fitting lid (preferably 10 to 12 inches) over high heat, melt the butter with 1 teaspoon of brown sugar, and ½ teaspoon salt. Add 23 cup water and the radishes and bring to a boil. Reduce the heat to medium-low, cover and simmer gently until the radishes can be easily pierced with a knife but are not completely soft, about 3 minutes.

Spread the greens over the radishes and raise the heat to return the liquid to a boil. Reduce the heat to medium-low, cover, and simmer gently until the greens are emerald and tender, about 5 more minutes.

Use tongs to transfer the greens to a large bowl or serving dish, pressing excess liquid out of the greens against the side of the pan. Gently transfer the radishes to the dish as well.

Add the vinegar, black pepper, and a few gratings of nutmeg to the liquid in the pan and bring to a boil over high heat. Boil, uncovered, until the liquid has turned syrupy (you’ll end up with about 2 tablespoons), about 2 minutes. Taste and add a little more salt and sugar if needed.

Return the radishes and greens to the pan and fold gently to coat the vegetables.

Tips:
Layer the greens on top of the radishes and don’t stir, so that you can remove the greens first, and squeeze some of their liquid back into the pot, without mashing the tender radishes.

Asparagus Salad with Mimosa and White Wine Vinaigrette

Serves 4

INGREDIENTS

1 pound thin asparagus, 1 inch trimmed from the bottoms
Sea salt or kosher salt
4½ teaspoons white wine vinegar
1 tablespoon minced scallion (white part only)
2 teaspoons Dijon mustard
18 teaspoon honey
4½ teaspoons extra-virgin olive oil
Freshly ground black pepper
Mimosa (optional)
1 hard-cooked egg
1 tablespoon finely chopped fresh chives

DIRECTIONS

Fill a bowl with water and ice. If you have time, peel the lower 2 inches of the asparagus stalks, which makes the salad greener and more tender.

In a ten-inch sauté pan or saucepan wide enough to accommodate the asparagus, bring six cups of water to a boil. Add 2 tablespoons salt. When the water returns to a boil add the asparagus and simmer for 2 minutes. Drain the asparagus and transfer immediately to the ice bath until chilled. Drain well and blot thoroughly dry with paper towels.

In a bowl, whisk together the vinegar, scallion, mustard, and honey. Whisking constantly, drizzle in the oil until smoothly combined. Season with salt and pepper. Toss the asparagus with the vinaigrette and arrange on a platter. Chill for 30 minutes to allow the asparagus to absorb the vinaigrette.

If making the mimosa, press the hard-cooked egg yolk through a wide mesh sieve into a bowl. Finely chop the egg white, and add it to the yolk, along with the chives. Season with salt and pepper. Stir the egg yolk and white together with chives and season with back pepper and a little salt. Sprinkle the mimosa over the asparagus just before serving.

Mixed Greens with Herbed Vinaigrette

Serves 8

INGREDIENTS

1 shallot, minced
2 tablespoons white wine vinegar
1 tablespoon lemon juice
Salt
2 tablespoons extra-virgin olive oil
2 tablespoons canola oil (neutral flavor oil)
1 teaspoon fresh thyme leaves, chopped fine
1 tablespoon fresh basil leaves, chopped
¼ cup fresh chives, chopped
¼ cup fresh parsley, chopped
8 cups (about ½ pound) mesclun (mixed baby greens)
Freshly ground pepper

PREPARATION

In a large mixing bowl, whisk together shallot, white wine, lemon juice and 1 teaspoon salt. Slowly stream in oils until vinaigrette is emulsified. Add herbs and greens and mix well until vinaigrette coats all the leaves. Season to taste with salt and freshly ground pepper. Serve immediately.

Yellow Gazpacho Cocktails with Grilled Cilantro Pesto Shrimp & Avocadoes

Serves 6

INGREDIENTS

15 medium yellow tomatoes cut into little pieces, making sure to retain liquid
1 teaspoon lemon zest
2 tablespoons fresh cilantro, finely chopped
2 medium cucumbers, peeled
¼ cup olive oil
1 teaspoon salt
1 red bell pepper, finely chopped
1 teaspoon cracked pepper
1 medium red onion, finely chopped
15 shrimp, tail on and cleaned
2 cloves garlic, finely chopped
¼ cup cilantro pesto, recipe below
¼ cup white wine vinegar
Avocado, for garnish

PREPARATION

Mix all ingredients except shrimp, cilantro pesto and avocado in a large mixing bowl. Take 1 cup of mixture and blend in a food processor or blender, pulsing until semi-smooth. Alternatively grind up with a mortar and pestle until desired consistency. Pour liquid back into mixing bowl and stir well. Refrigerate for at least 2 hours before serving.

Grill shrimp, brushing occasionally with cilantro pesto. Serve in martini glasses with 2 grilled shrimp and avocado for garnish.

Cilantro Pesto

INGREDIENTS

1 bunch fresh cilantro (approx. 1½ cups)
Juice of 4 limes
3-4 cloves fresh garlic
Juice of 1 lemon
Zest of 2 limes
1 tablespoon cumin
1 jalapeño pepper, chopped and seeded (optional)
½ cup walnut oil or olive oil
Salt, to taste

PREPARATION

In a blender, or with a handheld food processor, combine all ingredients with salt and blend until smooth.
