Delicata Squash with Garlic and Herbs

Serves 4 as side dish and 2 as main course

INGREDIENTS

2 Delicata squash, cut in half, seeds removed
3 tablespoons extra-virgin olive oil
4 garlic cloves, sliced
2 tablespoons fresh rosemary leaves, chopped
¼ cup fresh thyme leaves, chopped
Salt and freshly ground pepper

PREPARATION

Preheat oven to 375°F.
Place squash in a casserole dish and drizzle with olive oil and coat cut-side of squash with garlic, herbs and season with salt and pepper, cover with aluminum foil. Roast in oven until cooked through, 30 to 40 minutes. Serve immediately.
