Wooden Skewers, pre-soaked
2 tablespoons tamarind paste
1 tablespoon fresh ginger, grated
3 cloves of garlic, grated
1 shallot, chopped fine
Zest of 1 lime
Juice of 3 limes
2 tablespoons soy sauce
1 tablespoon sambal
