Makes 20-30 small zeppole
1 pound fresh ricotta, drained
3 eggs, beaten
1 teaspoon salt
½ teaspoon cayenne pepper
3 teaspoons baking powder
1 cup flour
1 cup shaved and chopped asparagus
½ cup ramps, chopped fine
¼ cup fresh mint leaves, chopped
