2-3 salsify roots, scrubbed but not peeled
1 tablespoon cynar
1 tablespoon orange juice
2 teaspoons orange zest
Â½ tablespoon coarse sugar
Pre-heat oven to 225Â°F. With a vegetable peeler, peel off thin long layers of the salsify root. Mix the salsify root peels with the cynar, the orange juice, the orange zest and the sugar until all the salsify is coated. Arrange the salsify on a baking sheet and place in the oven for 2 Â½ or 3 hours or until fully dried. Take out of the oven and let stand for at least half an hour to cool and harden.
