Lemon-Mint Herbal Syrup

Makes 1 cup


½ lemon sliced
½ cup fresh mint, chopped
½ cup light brown sugar
½ cup water


In a medium saucepan combine all ingredients and bring to a boil, turn down the heat to a simmer and simmer for about 5 minutes. Strain, and store syrup in the refrigerator for up to 3 weeks.
