Spring Greens Garlic Risotto

Follow the basic risotto recipe and add the ingredients listed below during the sauté stage and the fresh herbs at the end.


2 c brown rice
3 c chopped chard, sorrel, spinach, and dandelion greens
½ c chopped red onion
½ c chopped shallot
1 c dry white wine
¼ c butter
¼ c asiago cheese
¼ c each of tarragon and chives chopped fine
