Thai Basil Green Curry


Makes 4 servings.

INGREDIENTS

1 cup chopped thai basil
1 cup chopped cilantro
3 garlic cloves
½ c chopped red peppers
1 medium yellow onion chopped
1 c chopped fine carrots
2 small green chilis
1c coconut milk
2 T Olive oil
Salt
Chicken or shrimp optional

PREPARATION

Heat olive oil in a large skillet, sauté garlic, chilis , red peppers , carrots and onions until soft.  Blend cilantro and thai basil with coconut milk until a smooth green color.  Pour over sauté mixture and cooked until warm.
