Black Olive, Parsley & Caper Chimichurri


Makes 1 ½ cups

Ingredients

½ medium red onion, chopped fine
½ small red shallot, chopped fine
¼ cup capers, chopped coarsely
½ cup calamata olive, chopped coarsely
1/3 cup fresh parsley, chopped fine
2 tablespoons fresh oregano, chopped fine
1 teaspoon lemon zest
¼ cup olive oil
¼ cup red wine vinegar ( lighter)

Directions

Mix all ingredients in a bowl ad chill.  Serve at room temperature.
