3 large beefsteak tomatoes, sliced paper-thin
Course sea salt & cracked pepper
½ cup herb pesto
PREPARATION
Place tomatoes flat on a platter and sprinkle with salt and pepper. Drizzle pesto over platter of tomatoes.

½ cup pine nuts
2-3 cups fresh basil leaves, chopped
⅔ cup extra-virgin olive oil
1 teaspoon lemon zest
Juice of one lemon
Salt/pepper

Blend all ingredients in a blender or with a handheld food processor until smooth.
