Cauliflower Tabouli with Lemon Olive Oil Dressing


1 head of cauliflower, cut up in pieces
¼ cup lemon juice
3 tablespoons of olive oil
1 teaspoon sea salt
3 medium tomatoes, seeded and finely diced
¼ cup red onion, finely diced
1 cup cucumbers, seeded and diced
¼ cup hemp seeds
2 bunches of flat parsley, finely chopped
1 handful of mint leaves, finely chopped


Put the cut cauliflower in the food processor and process until it resembles couscous.
Put the cauliflower that now resembles couscous in a large bowl and add the remaining ingredients and mix. Taste and make adjustments.
