INGREDIENTS
4 small chicken breasts (flattened)
2 Medium shallots chopped
2 meduim leeks chopped
1 cup baby carrots halved
¼ cup chopped thyme
4-5 bay leaves
2 cups cubed baby potatoes
¼ c white wine
¼ c chicken stock
½ c half and half
Salt/pepper
PREPARATION
Pre heat oven to 450 F. Place chicken breasts in a flat glass baking dish, cover with shallots, leeks potatoes, carrots and fresh herbs and bay leaves. Mix all wet ingredients and salt and pepper and pour over chicken and vegetables. Bake for 30 minutes covered until chicken and potoates are done.
