Rosemary Black Eyed Pea Salad

Makes 6 Servings


½ c finely chopped carrots
½ c chopped sun dried tomatoes
1 bunch chopped green onion
½ c chopped red onion
1 c chopped broccoli
3 cups cooked black eyed peas
¼ c olive oil
¼ c lemon juice
¼ c chopped rosemary up to ½ c


Mix black eyed peas, and all vegetables well in a large mixing bowl.  Add olive oil and lemon juice and chopped rosemary.  Add salt and pepper to taste.
